We tried out the Ooni Fyra mobile pizza oven to see if it could handle family pizza nights.
Windy conditions will increase the time it takes to get hot, and they also expose pellets' greatest flaw: flame maintenance. While the Fyra 12 is capable of reaching ideal pizza-making temperatures, it doesn't stay there. Even with perfect conditions, the window to cook a proper Neapolitan pizza is just a few minutes, and the oven often requires a bit of recovery time between pies.
My favorite thing about the oven is how easy it is to use. The wood pellets and fire starter combo could not be simpler, and so long as you keep the hopper filled to the top (and don’t, as I did on one occasion, forget about it while eating pizza for 45 minutes), you’ll be rewarded with consistent, very high temperatures. The first time I used the Fyra, I was scared about getting the pizza off the peel and into the oven, not maneuvering the pie around the oven correctly, or otherwise ruining dinner by having no experience working with a pizza oven before, but the entire process was intuitive. Without ever interacting with live fire, you reap all of the flavorful benefits in your cooking.

Fyra 12 can be amazing, but there are some caveats. Ooni's pellets and firestarters are a must. This is annoying but it will make your pizza taste great. It is essential to ensure that the hopper does not become clogged if you make multiple pizzas. If you can bear to keep these things in view, I cannot recommend it enough. The Fyra 12 is the simplest wood fired pizza oven you can find. It produces amazing results in a compact and sleek package that can be stored away when not in usage. I am excited to continue using the Fyra 12 and plan to have a pizza party with my parents when they visit next month. That is a testament to how well it works. I could take them anywhere in New York City to get pizza. But the good stuff you can make at home is even better.
To get started, you first need to remove the chimney cap. Next, remove the grate and fill it with hardwood pellets. I followed the guidelines and used about two handfuls to get started. You then add a firelighter to the front of the grate (I used the Ooni firelighters, which we had been provided with), light it and push the grate into the back of the pizza oven.

The Ooni Fyra 12 makes great pizza. Regardless of the dough you use (I’ve tried a few homemade recipes as well as store bought), the results are puffed, spotted, and cooked in record time. It’s a delight to use for a fun dinner for two and amazing as a centerpiece of a party, once you get a handle on your personal system and best practices. The compact nature of the oven also means that whenever it’s not getting the party started, it can easily be stowed away in its box, which is relatively narrow and stackable. As a hater of one-trick kitchen gadgets and large appliances generally, I was surprised how much I loved the Ooni, and how readily I made space for it in my home—the payoff is just that fun.
If you're looking for 100% certainty about when the oven is up to temperature, you can buy an Ooni Infrared Thermometer. However, this gadget might not be necessary if you're going to cook pizzas in the oven. After using the oven a few times, I was able get a good idea when it was ready to bake.
As long as I did not add pellets during cooking, the pizza oven held its temperature extremely well. I was capable of taking one pizza out, putting the door back on, preparing the next pizza, then putting it in to cook. It didn't take long for the oven temperature to rise again.

The Ooni Fyra 12 only has some minor drawbacks, but these are things I could have anticipated. I was able to live with them. For example, cleaning the oven can be tedious. After cooling the oven completely, take out the ashes and clean it with a dry, non-toxic cloth. Finally, use a pizza brush or a scraper to remove any remaining food and debris. I had to use elbow grease and a fish spatula to clean the baking dish. However, by flipping the pan for the next cook (as advised), the high heat helped to melt any remaining food particles.
To increase the heat in the Ooni Fyra you can simply adjust your chimney vent. Open the vent, remove the chimney cap and increase the airflow in the oven.

Before cooking pizzas in the Ooni Fyra I ran it for 30 minutes at high temperatures and allowed it to cool down, before wiping the inside with dry kitchen towel. Ooni says this is important to do in order to remove any residues from the manufacturing process before cooking in it.
But, as with any pizza oven the Fyra 12 will need fuel. Fuel is expensive. Ooni sells bags 20-pound for $25. There are cheaper options, however, and any brand will suffice. Grab some fire starters, while you are at it.
My maiden pizza journey began with all-natural fire starters, and organic wood pellets, purchased from a local hardware. These initially worked perfectly. It took about 4-6 minutes for each pizza to cook, even though the oven never reached the desired temperature. The Ooni starter and hardwood pellets worked much better and the fire was more intense. It took me only a few minutes to make the same pizza.
It takes a certain skill to get the pizza off of the peel. You'll soon learn the art of gently removing the pizza from the peel.
These features make Fyra 12 an appealing option for many types of cooks.
The main question, however, is whether or no the Fyra 12 has the ability to cook a quality pizza. It is possible to cook a high-quality pizza if you can navigate around its quirks.
When it comes to backyard pizza ovens, Ooni is the brand to beat, and the Fyra 12 ($349) is the cheapest model it makes. The Fyra 12 is also Ooni's most portable option. It weighs 22 pounds and uses dry hardwood pellets as its fuel source, which are naturally easier to transport and widely available for purchase at grocery and hardwood stores around the U.S.

The Ooni Koda is better if you want easy, easy, easy but still great pizza. The Ooni Fyra is better if you want authentically wood-fired pizza.
You will need to keep it covered so that rain and snow don't seep inside. Be sure to keep the oven door on and cover the chimney so no moisture can enter. If it gets wet, the moisture will release on the cooking surface, and then when it heats up, it will release too much steam and cause hairline fractures. 1 Feb 2022
